Large EPROMs are dead?

Hi All,
As I have looked into the options for bringing any ongoing projects or future ideas to life physically, I can't help but be baffled by the lack of options for finding suitable EPROMs and EEPROMs. It seems that anything above 8Mbits no longer exists (death by cheap NAND flash?) and 32Mbits is simply impossible to find and has been for years at this point. Thankfully for smaller projects 256kbit is quite abundant, which is perfect for any beginner NES project.

But for anything big I've had in mind this is a huge obstacle - using CPLDs as mappers is fine - it's just that there is nothing past the 8Mbit limit in terms of memory.

What are viable alternatives that one can realistically handle at home? I mean it's of course not exactly possible to solder any grid array chip to a PCB by hand. Do have just have to accept that the time for this technology is simply gone?
